Heritage, eco-tourism and local produceIn order to protect, maintain and publicise its historical heritage, the Forestry, Estates and Vineyards department of the City of Lausanne provides a wide range of accommodation in the enchanting environment of three of its wine estates. Table d’hôte dining, bed & breakfast, reception rooms and areas to taste and buy wines and other local produce have been brought together to cater for visitors. With the aim of contributing to the development of sustainable eco-tourism, these estates are situated just a few kilometres from Lausanne and are easily accessible by train. The products on offer at receptions mostly come from regional producers. These accommodation and catering facilities are designed both for private breaks and for businesses wishing to stage seminars and to enjoy “table d’hôte” services. In general, on the wines estates of Lausanne, they don’t just talk about sustainable development, they do it! The bed & breakfast accommodation and reception rooms have been fitted out simply, so as to cater for essential needs and to favour natural materials. The furniture was made from wood cut from FSC-certified forests. A large proportion of the furniture was made of wood from the City of Lausanne, in workshops belonging to the Lausanne Forestry, Estates and Vineyards Service.
